As Chef at Brookline’s award winning Regal Beagle, Stacy Cogswell’s menu epitomizes what the much-loved neighborhood joint is known for: Exceptional, upscale comfort food with a creative and chef-driven twist.

Stacy’s early-and-often exposure to the homemade foods and flavors of New England’s changing seasons sparked her passion for cooking and inspired her to enroll in Johnson & Wales Culinary School.  After graduation, she travelled the US and the world uncovering and learning from many different local traditions. Her extensive travels brought her through Singapore, the Caribbean, along the eastern US and ultimately to the local kitchens of two world-renowned chefs to hone her skills and further develop her own unique cooking style.

 Upon returning to Boston, she went to work as sous-chef in Jean Georges Vongerichten’s kitchen at Market where she sharpened her culinary technique and learned about simple clean flavors. From one award-winning chef’s kitchen to another, Stacy was named Chef de Cuisine to Susan Regis, the James Beard award-winning chef of Upstairs on the Square. With Regis, Stacy explored local farmer’s markets to learn about local, sustainable and artisanal hand crafted foods. 

While Stacy is not in Regal Beagle kitchen you can find her at home rolling out fresh pasta made from scratch and pickling seasonal vegetables (and just about anything else she can get a hold of) from her home garden. 

The Regal Beagle

Though it's named after the much-loved local pub from Three's Company, the Regal Beagle certainly doesn't feel like a throw-back to the 70s or 80s. The dapper little restaurant, housed right on Harvard Street in Coolidge Corner, has a chic décor, a modern menu of seasonal, creative comfort food and a cheeky list of inspired cocktails.

Like its sister restaurant in the Fenway, Church, the Regal Beagle is a true neighborhood bistro -- affordable, yet upscale with a full bar and a rotating wine program that offers a small selection of boutique wines, all by the glass or bottle. Whatever the occasion or the mood - patrons can grab a table for a bite to eat or snag a seat at the bar for cocktails. If they want a little of each they can relax in the lounge where we also offer our "Regal Rendezvous" menu from 3pm - 5pm daily.
